Sólveig Eiriksdottir, known as “Solla”, is Iceland’s most famous vegan chef and author of Raw - a pioneer of healthy food
Born in 1960, Solla studied teaching and textiles in Copenhagen, with healthy cooking being her main hobby. This hobby quickly became her passion and she moved back home and started working as a chef at a vegetarian restaurant.
In 1994 she founded her first vegetarian restaurant called “Grænn kostur” (Green Option) running both the business and cooking most of the food for ten years. She then created the organic food label Himnesk hollusta (Heavenly Health), which quickly became the biggest organic brand in Iceland.
In 2010 Solla bought Gló restaurant, the first place to sell raw food in Iceland, and transformed it into one of the most popular restaurants in Reykjavík, offering a wide selection of vegetarian, vegan and raw food options. There are now four restaurants and at least 50% of everything on the menu is organic.
Solla has published numerous cookbooks with healthy and nutritious recipes, one of which – Raw – has been translated into several languages. She is also a prominent figure in the raw food movement. At the Best of Raw awards she won the categories “Best Raw Simple Chef” and “Best Raw Gourmet Chef” in 2011 and 2012.
Solla, herself a local celebrity, frequently appears on TV. She had her own popular cooking show and cooked with celebrity chef Rick Stein when he visited Iceland in 2016.
Most will agree that Solla, is a veteran of raw and vegan cooking, who has had a huge impact on the organic movement on both sides of the Atlantic with her dedication to using wholesome, sustainable, organic products in her recipes.
